Sweet potato, quinoa & cannellini bean cakes

Quinoa – pronounced keen-wah – is a gluten-free wholegrain and a source of protein. It has a delicate, nutty taste and chewy texture.

Recipe courtesy of Asda recipes.

This has been tried and tested and given the thumbs up! Cannellini beans were replaced with butter beans

Serves 4 people

Ingredients

200g sweet potato (peeled weight), cut into large, even-sized chunks
200g potato (peeled weight), cut into large, even-sized chunks
300g can cannellini beans, drained and rinsed
1/2 tsp crushed dried chilli flakes (optional)
75g quinoa
3 tbsp chopped parsley
4 vine-ripened tomatoes, chopped
1 ripe avocado, stoned and cubed
200g sweetcorn, cooked and drained
4 spring onions, trimmed and sliced
1 lime, juice of
Salad leaves, to serve

Method

Pre-heat the oven to 180C/160C Fan/Gas 4. Line a baking tray with baking paper. Cook the potato chunks in a pan of boiling water for 10 minutes, then add the sweet potato and cook for another 10 minutes, or until tender.
Drain and return to the pan. Place on a low heat and cook for 1 minute, to steam off any liquid. Transfer to a large bowl and add the beans and chilli, if using.
Meanwhile, put the quinoa in another pan, cover with cold water and bring to the boil, then simmer for 12-15 minutes. Drain and add to the potato mixture.
Add the parsley, season with pepper then mash. Shape into 8 cakes, place on the baking tray and bake for 20 minutes.
Meanwhile, make the salsa. Put the tomatoes, avocado, sweetcorn and spring onions in a bowl, add the lime juice, then mix well. Serve with the cakes, with salad leaves on the side.

My Juice Plus Journey...joining Juice Plus...by Ray leary

My Juice Plus Journey……

In January 2015 and after having such amazing results on the Juice Plus products, I decided to join the business.

The title is “Franchisee”. This means I have my own business not only promoting the Juice Plus range of products but also having the opportunity to help others get the same benefits to their health as I had done.

Amongst the reasons I decided to start my business was that I had attended a regional seminar in Bolton in November 2014 and I was so impressed with the enthusiasm and commitment of everybody there….. Over 500 people there from all walks of life and such a variety of age groups.

This was clearly going to be a residual income for me, a second business if you like. As I already run a very successful management consultancy business.

Many people have been so successful with their Juice Plus business they have packed their job in and gone full time.

A lot of people I met at the Bolton Conference, seemed to have stories of financial difficulties or they hated their job (or lost their job) or had some personal trauma in their lives – but I did not. So I wondered if I would fit in.

I need not have worried because from day one I made so many positive friends who all had one thing in common – they wanted to make a better life for themselves and their families, help others to do the same and give as many people as possible the opportunity to improve their health and their life styles.

So I thought I would give it a go.
It cost me £50 to start my business! .... Unbelievable.

They told me I did not need to carry stock, no need to take payment from customers and did not need to deliver, all this done by Juice Plus head office. Sounded too good to be true.

But it wasn't,  it was such a fantastic opportunity. Now it is multilevel marketing (definitely not pyramid selling which is illegal) but that was the beauty of it, because all I had to do was to tell people my story and how Juice Plus can help them both with their health and their wealth.

I was successful in my approach, within my first full month I achieved my first promotion, which increased my commission level and at the end of my second full month I achieved my second promotion, increasing my commission level and was entitled to my first bonus of £300.

I am now well on my way to my next level of promotion which will give me a bonus of £900.
I have also have a team of six franchisees working within my group which I've branded Fresh Start Group.

Remember all this has been achieved as a part time residual business as I still continue to work 12 -14 hours a day on my consulting business.

I am extremely pleased to have achieved what I have in such a short space of time, however there is so much more I can do with my Juice Plus business. I have a five year plan that will allow me to earn a substantial income and build a team that will mean I can work when I choose to and when I'm not working I’ll still be earning….. Even when I'm asleep!

My Juice plus journey...by Ray Leary

How I started on Juice Plus
Just about twelve months ago a colleague and friend of mine said she was worried I was looking under the weather and I told her the reasons why – long hours, new client demands, lots of stressful travelling, poor diet, lack of sleep, etc (I’m sure many of you can relate to my problems)

She was right when she told me I had to look after myself better, but like a lot of men I felt I was too busy to do anything about it and I would be fine. Anyway she regularly made a point of asking me how I was and I regularly gave my stock answer I was fine (I could tell she did not believe me)

My friend told me she was a franchisee of a wonderful product and she introduced me to something called Juice Plus, a nutritional supplement of fruit, vegetables and berries and told me this stuff had some amazing results for a wide range of people and I should try it! I was very dismissive of her offer and politely refused.

However she was persistent and in the end I agreed to give it a try.

I took what they called the premium capsules, their fruit, veg and berry mix, two of each so six capsules per day and waited for nothing to happen!

How wrong I was, within a few weeks I found that I had a lot more energy, I was sleeping better and waking more refreshed. Virtually every day I found myself waking up before my alarm was due to go off, when I mentioned this to my friend she said that is because your body has had sufficient rest and is ready to start the day again?

Clearly I needed less sleep to get me through my 12-14 hour days running my business, traveling up and down motorways and attending a number of sometimes intense board meetings with clients. I kept thinking that this was probably just an initial burst of energy and it would wear off soon!

But it did not I just started to feel so energized!
I also suffer a form of arthritis in my knees which was painful after spending hours sitting in same position, However after a couple of months taking Juice Plus capsules the pain  and inflammation started to reduce making movement a lot easier. I am not claiming it has got rid of the arthritis, but certainly easier to live with.

I’m even managing to run up my stairs at home two at a time…. Cos I can!
My friend then introduced me to the Juice Plus Complete Shakes which are a meal replacement shake, so I thought ok I will give them a go. Now at this point I have to tell you that three of my least favourite vegetables/fruits are Spinach, Curly Kale and avocado. Guess what I started to put in my breakfast shakes?

You got it ….. Spinach, Curly Kale and avocado! I loved it.

I also have bananas, rhubarb, berries, pineapple, melon, coconut, mango and many others as combinations in my shakes.
I ask you when was the last time you had Spinach, Curly Kale and avocado for your breakfast.

After a few months I noticed I was losing weight, not a lot at a time maybe a few pounds a week which I was pleased about. Over a period of five months I reduced my waist size from 42” to 36” and in total lost over two stone. The good thing about this was that I was not on a diet, I was still going out for meals, having a few pints (but all in moderation).
The down side of this I had to have several newish suits altered, (if I fastened the trousers and did not put a belt on they just fell down to my ankles – I just looked like I was wearing somebody else’s clothes!)

Along with all the benefits I have listed above, one of the other main benefits of taking Juice Plus is that it changed my attitude to the food I ate. I’m now much more conscious of what I put in my body. I drink a lot more water and eat mostly naturally produced food, rather than processed food.
I feel fantastic for it, I can’t remember the last time I had a cold and rarely do I feel ill.

I’m coming up to my 58th birthday soon and I have now been on Juice Plus for almost a year. I have to tell you I feel great, I feel fit (I took up swimming recently for the first time in ten years) I feel better than I ever have done over the last fifteen years.

I’m getting comments from people on how healthy I’m looking and lots of people ask am I on a diet, my response is no I’m on Juice Plus.
